Ingredients:2-3 Chicken breasts, cubed1 Tbsp Spice Mecca Tandoori masala ± 5ml Salt1tsp (5ml) Chopped green chillies1tsp (5ml) Crushed garlic2-3 ripe avocados, mashed with ± 2 Tbsp lemon juice½ Double cream yoghurt¼ Cup mayonnaise2 Small chopped red peppersSmall bunch spring onions, chopped1 Green apple, finely diced and tossed in lemon juice3 – 5ml Chopped parley½ Red onion, slicedRocket leavesGarnish: CranberriesMethod:1. Braise chicken with tandoori masala, salt, green chillies and garlic. Cool2. Mix together yoghurt, mayonnaise and avocado3. Toss all ingredients together and serve on a bed of rocket leavesAccompanied by hot garlic bread.
