Ingredients:   3-4 large brinjals (enough to line a large casserole dish) Salt 200ml oil 2 large onions, chopped 6 – 8 whole cloves 6 – 8 whole all spice berries 1 kg lean mince 1 Tbsp garlic and ginger paste 2 Tbsp ground coriander ½ -1tsp crushed peppercorns 2 Tbsp Spice Mecca BBQ spice 1 Tbsp rosemary or origanum Salt to taste 1 tin chopped tomatoes   Method:   Slice brinjals into rings ± 2cm thick. Banana Muffins

Ingredients: 3 cups cake flour 2 tsp baking powder 1 cup sugar 4-6 ripe bananas 1 tsp bicarbonate of soda 2 eggs 1 cup oil 1 cup Bulgarian yoghurt   Method:   Place flour, baking powder and sugar in a bowl. Mix. Separately mash bananas and bicarbonate of soda. Separately beat up eggs, oil and yoghurt. Add bananas and the liquid to the dry ingredients at the same time and stir with a metal spoon. Ingredients:2-3 Chicken breasts, cubed1 Tbsp Spice Mecca Tandoori masala ± 5ml Salt1tsp (5ml) Chopped green chillies1tsp (5ml) Crushed garlic2-3 ripe avocados, mashed with ± 2 Tbsp lemon juice½ Double cream yoghurt¼ Cup mayonnaise2 Small chopped red peppersSmall bunch spring onions, chopped1 Green apple, finely diced and tossed in lemon juice3 – 5ml Chopped parley½ Red onion, slicedRocket leavesGarnish: CranberriesMethod:1.
