Chicken Feta Spaghetti Balls

INGREDIENTS

  • 2 Tbsp SpiceMecca Portuguese Spice
  • 1 Kg Chicken Fillets (cubed)
  • 1 tsp Salt
  • ½ tsp White Pepper
  • 1 Tbsp Crushed Garlic
  • 1 Tbsp Lemon Juice
  • 1-2 chopped Green Chillies (optional)
  • 2 cups cooked spaghetti, chopped
  • 2 rounds of feta cheese (small cubes)
  • 1 bunch fresh coriander
  • 1 egg, beaten
  • Corn Flour
  • Breadcrumbs
  • White Sauce
    • 30g Butter
    • 40g Flour
    • 300ml milk

METHOD

  1. Cook chicken for ± 10mins with all ingredients (excluding spaghetti, feta and fresh coriander).
  2. Set aside and allow to cool.
  3. In a separate saucepan make white sauce (on medium heat melt butter, add flour and blend. Add hot milk and whisk until smooth).
  4. With a spoon blend together chicken, feta, coriander, spaghetti and white sauce.
  5. Moisten hands with water, make golf-ball sized balls and dust lightly with corn flour.
  6. Roll in egg then breadcrumbs and refrigerate for ± 4 hours before deep frying on medium heat until golden brown.
